Bass Pecan Company 2009 Recipe Contest Winner

Chocolate Dipped Pecan Bacon Chews

Ingredients:

• 2 Slices uncooked bacon

• 12 Individually wrapped caramels, unwrapped

• 1 teaspoon whole milk

• 10 Round butter crackers (such as Ritz)

• 1 cup semi-sweet chocolate chips

• 2 ¼ teaspoons shortening, divided

• ¼ cup white baking chips

• 3 tablespoons chopped Bass Pecan Halves

Method

Place medium skillet over medium heat until hot. Cook bacon, turning until crisp then drain on paper towels. Finely chop on cutting board.

Microwave caramels and milk in small bowl for 30 seconds. Stir then heat another 15 seconds then stir until smooth. Stir in chopped bacon. Spoon one generous measuring teaspoon full of caramel mixture in center of each cracker (this should spread a little to cover most of cracker).

Refrigerate to firm caramel slightly (about 15 minutes). Meanwhile, place semi-sweet chocolate chips and 2 teaspoons of the shortening in small bowl. Microwave until melted (about 1 minute) stirring halfway through.

Dip bottom of candies, one at a time into chocolate then spoon some over top, spreading to cover the entire piece. Place on parchment or waxed paper lined cookie sheet. Refrigerate until no longer sticky when touched (at least ½ hour).

Microwave white chips and remaining 1/4 teaspoon shortening in small bowl until melted, about 45 seconds. Stir until smooth, place in a freezer-weight zip top baggy and cut a small hole in corner. Drizzle in a back and forth motion over candies. Sprinkle with pecans. Refrigerate to set (at least 10 minutes). Serve at room temperature.
