Why, when and how do I graft a tree?

At our nursery and in our orchards we use the following;

 Pecans Whip & Tongue method January - March
Four Flap method April - May
Apples, Crabapples, Pears, Plums Whip & Tongue method March
Chip Bud method April
Persimmons - American and Asian Chip Bud method May
