1/2 cup margarine
1/2 cup unsalted butter
1/2 cup sugar
1 tsp vanilla extract
1 cup chopped pecan (small to medium sized pecan pieces work best)
2 sleeves buttery-flavored crackers (Ritz or Club Crackers)
Preheat oven to 325 degrees. Cover 2 cookie sheets with parchment paper. Arrange crackers on top of parchment paper. In a sauce pan, combine margarine, butter and sugar and boil for 3 minutes. Remove from heat and add vanilla and pecan pieces. Stir to coat pecan pieces well. Spoon mixture over crackers. Bake for 8 minutes. Remove from oven and allow to cool briefly. Remove crackers from cookie sheet with spatula. Store at room temp in a sealed container.
